I recently moved to Austin, TX from Baltimore, MD to work as an epidemiologist for the Texas Department of Health, and this is my first blog. My passions lie in health policy, economics, food/cooking, and the environment. I am particularly intrigued by the interplay of these passions: how what we eat impacts our health and the environment, and the availability of affordable healthy food.
With our fast pace lives and the need for fast affordable food, I believe we have become disconnected from our food: where it comes from, how it is prepared, what it does to our bodies, and its’ true cost (the toll it takes on our health and the environment). I am a vegetarian who is working on transitioning to being a vegan. I believe food can be easy to make and taste good but at the same time be good for the body and the environment. The recipes I post here are recipes I have taken from cookbooks and websites and modified to make them vegan. This will be a learning process as I try new recipes and blog for the first time.

Mags I am looking forward to learning to cook and eat the recipes that you share on your blog. We have recently joined a food co-op here in Dallas and are always looking for ways to cook the veggies that we get every two weeks. Thank you for sharing! I will pass this on to the co-op members if you are comfortable with me sharing with the group?! We just eat sweet potatoe fries, similar to the ones you whipped up in the Burg!
